Easy and delicous pasta with sausage, bell peppers, and basil

Last night Colin and I cooked dinner together. We made 1/3 of the below recipe, with a few modifications (added tomatoes and 2 cloves garlic, forgot the parmesan). The best part was we got our smoked pork sausage from Otto's, an amazing sausage place down the street!

(to buy online: https://www.ottossausage.com/)

12 servings

Olive oil
3 lbs Italian sausage, crumbled
5 c. sliced onions
2 red peppers, cut into strips
1 ½ c white wine
2 lbs pasta
1 ½ c grated parmesan
2 c thinly sliced fresh basil

Cook crumbled sausage until brown, abt 12 min.
Transfer sausage to bowl with slotted spoon.
In oil in pan, cook onions. Saute until golden, abt 12 min. Add peppers and most of basil. Saute till tender, abt 6 min.
Pour wine into skillet. Boil 5 min.
Add sausage back in.
Cook pasta, drain. Return to pot. Pour in sauce. Mix in cheese. Mound in bowl, and garnish with remaining basil.
